| 500g (17.6 oz) | Cheese Tortellini |
| 800g (28 oz) | Crushed Tomatoes |
| 120ml (1/2 cup) | Heavy Cream |
| 50g (1/2 cup) | Grated Parmesan Cheese |
| 15g (1/2 cup, loosely packed) | Fresh Basil |
In a large skillet or pot, combine the crushed tomatoes. Bring the tomatoes to a gentle simmer over medium heat.
Add the cheese tortellini to the simmering tomato sauce. Stir gently to ensure the tortellini are submerged.
Cook the tortellini according to package directions, stirring occasionally, until they are tender and float to the surface. This usually takes about 8-10 minutes for fresh tortellini, or longer for frozen.
Reduce the heat to low and stir in the heavy cream until fully incorporated into the sauce. This will create a creamy, rich texture.
Gradually stir in the grated Parmesan cheese until it has melted and the sauce is smooth and slightly thickened.
Finely chop the fresh basil leaves. Stir most of the chopped basil into the tortellini mixture, reserving a little for garnish.
Serve the creamy tomato tortellini immediately, garnished with the remaining fresh basil.
