Prepare the burger patties: Gently place the ground beef into a mixing bowl. Avoid overworking the meat, as this can make the burgers tough. Season the beef evenly with 1 teaspoon (5g) of salt and 1/2 teaspoon (2.5g) of freshly ground black pepper.
Divide the seasoned beef into four equal portions, approximately 170g (6 oz) each. Gently shape each portion into a patty about 2.5cm (1 inch) thick. Make a slight indentation in the center of each patty with your thumb. This helps prevent the burgers from puffing up into a dome shape while cooking, ensuring they cook evenly and stay flat.
Prepare the burger buns: Spread 1/2 tablespoon (7.5g) of softened butter evenly on the cut sides of each of the four burger buns. This will help them toast to a golden brown and add a delicious richness.
Toast the buns: Heat a large skillet or griddle over medium heat (around 180°C or 350°F). Place the buttered buns, cut-side down, onto the hot surface. Toast for 1-2 minutes, or until they are lightly golden brown and slightly crisp. Watch them closely to prevent burning. Remove the toasted buns from the skillet and set aside.
Toasting the buns is crucial for texture and to prevent them from becoming soggy from the burger juices.
Cook the burgers: Wipe out the skillet if necessary, or use a clean one. Heat the skillet over medium-high heat (around 200°C or 400°F). Once the skillet is hot, carefully place the four burger patties onto the surface, ensuring they have enough space between them. Do not overcrowd the pan; cook in batches if necessary.
Cook the first side for 3-4 minutes for medium-rare, or until a deep brown crust has formed. Avoid pressing down on the burgers with your spatula, as this squeezes out the flavorful juices and results in a drier burger.
Resist the urge to move the burgers around too much while they sear. Let them develop a good crust.
Flip the burgers using a spatula. Cook the second side for another 3-4 minutes for medium-rare. Adjust cooking time based on your desired level of doneness (e.g., 5-6 minutes per side for well-done).
Add the cheese: During the last minute of cooking, place one slice of cheddar cheese on top of each burger patty. Cover the skillet with a lid (or a baking sheet) to help the cheese melt evenly and quickly. If the cheese isn't melting well, you can add a tablespoon (15ml) of water to the pan and immediately cover it to create steam, which aids in melting.
Adding cheese just before the burgers are finished prevents it from becoming greasy.
Assemble the cheeseburgers: Once the cheese is melted and the burgers are cooked to your liking, carefully remove them from the skillet. Place each cheeseburger patty onto the bottom half of a toasted bun. Add your desired optional toppings, such as lettuce, tomato, onion, pickles, ketchup, mustard, or mayonnaise.
Place the top half of the toasted bun over the toppings. Serve immediately and enjoy your delicious, classic American cheeseburger!
