| 1 tsp (5g) | Salt |
| 1/2 tsp (2g) | Cumin (optional) |
| 1 tsp (3g) | Paprika (for garnish) |
| 2 tbsp | Fresh Parsley (for garnish) |
Prepare the chickpeas: Drain and thoroughly rinse the canned chickpeas under cold running water. For an extra smooth hummus, you can optionally remove the skins from the chickpeas. To do this, rub the chickpeas gently between your hands or a clean kitchen towel; the skins should slip off easily. This step is time-consuming but yields a noticeably creamier texture.
Process the garlic and lemon juice: In a food processor, combine the peeled garlic cloves and the fresh lemon juice. Process for about 30-60 seconds until the garlic is finely minced. This helps to break down the garlic and mellow its raw flavor.
Add tahini and salt: Add the well-stirred tahini and the salt to the food processor. Process for another 60 seconds, scraping down the sides of the bowl as needed, until the mixture is smooth and creamy. It might look like it's separating or becoming grainy; this is normal.
Incorporate chickpeas: Add about half of the rinsed chickpeas to the food processor. Process until the mixture is thick and relatively smooth. Add the remaining chickpeas and continue processing.
Adding chickpeas in batches helps the food processor break them down more effectively.
Achieve desired consistency: While the food processor is running, slowly drizzle in the ice water, 1 tablespoon (15ml) at a time. Continue processing until the hummus is extremely smooth and creamy, reaching your desired consistency. This may take several minutes (up to 5 minutes). Scrape down the sides of the bowl frequently to ensure everything is incorporated.
Using ice water helps to create a lighter, fluffier hummus. Don't be tempted to add too much liquid at once; add it gradually until the perfect texture is achieved.
Add olive oil and optional cumin: Add the 2 tablespoons (30ml) of olive oil and the optional cumin (if using) to the food processor. Process for another 30-60 seconds until fully combined and the hummus is glossy.
Taste and adjust seasoning: Taste the hummus and adjust the salt, lemon juice, or cumin as needed. If it's too thick, you can add a little more ice water, a teaspoon (5ml) at a time, until it reaches your preferred consistency.
Serve: Transfer the hummus to a serving bowl. Create a swirl on top with the back of a spoon. Drizzle generously with extra virgin olive oil. Sprinkle with paprika and chopped fresh parsley for garnish.
Serve immediately with pita bread, fresh vegetables (like carrots, cucumbers, bell peppers), or as a spread in sandwiches and wraps.
