| 400g (14 oz) | Canned Chickpeas |
| 120ml (1/2 cup) | Tahini |
| 60ml (1/4 cup) | Fresh Lemon Juice |
| 2 | Garlic Cloves |
| 60ml (1/4 cup) | Olive Oil |
| 60ml (1/4 cup) | Cold Water |
| 1 tsp | Salt |
| 1/2 tsp | Ground Cumin |
Combine the drained and rinsed chickpeas, tahini, fresh lemon juice, peeled garlic cloves, 60ml (1/4 cup) of olive oil, salt, and optional cumin in the bowl of a food processor.
Process the ingredients until a thick paste forms. Scrape down the sides of the bowl as needed. This initial stage may take a minute or two.
With the food processor running, slowly stream in the cold water (or reserved chickpea liquid) until the hummus reaches your desired creamy consistency. You may need slightly more or less water depending on your preference. Continue to process for another 2-3 minutes until the hummus is very smooth and airy.
Taste the hummus and adjust seasoning as needed. Add more salt or lemon juice to your preference.
Transfer the hummus to a serving bowl. Drizzle with a little extra olive oil and optionally garnish with a sprinkle of paprika, chopped parsley, or a few whole chickpeas.
