Ingredients

Servings: 12
450g (1 lb) Ground beef (80/20 lean-to-fat ratio)
1 tsp (5g) Salt
1/2 tsp (2.5g) Black pepper
1 tbsp (15ml) Worcestershire sauce
12 (2 packages) Slider buns
12 Cheddar cheese slices
About 24-36 Dill pickle slices
2 tbsp (30g) Butter, melted
To taste Optional: Ketchup, mustard, mayonnaise
To taste Optional: Sliced onion, lettuce

Steps

1

In a medium bowl, gently combine the ground beef, salt, black pepper, and Worcestershire sauce. Be careful not to overmix, as this can make the patties tough. Mix just until the seasonings are evenly distributed.

💡

Using 80/20 ground beef provides the best flavor and juiciness for sliders. Overworking the meat can result in dense, dry patties.

2

Divide the beef mixture into 12 equal portions, about 37.5g (1.3 oz) each. Gently shape each portion into a small patty, slightly larger than the slider buns, as they will shrink during cooking. Aim for a thickness of about 1.5cm (0.6 inches).

💡

Make the patties slightly wider than the buns. They will shrink as they cook and lose fat.

3

Preheat your griddle or a large non-stick skillet over medium-high heat (190-200°C or 375-400°F). If using a grill, preheat it to medium-high heat.

💡

Ensure the cooking surface is hot before adding the patties for a good sear.

4

Carefully place the patties onto the hot griddle, skillet, or grill. Cook for approximately 2-3 minutes per side for medium-rare, or 3-4 minutes per side for medium to well-done. Avoid pressing down on the patties with your spatula, as this squeezes out the flavorful juices.

💡

Resist the urge to press the burgers. This is a common mistake that leads to dry burgers.

5

During the last minute of cooking, place one slice of cheddar cheese on top of each patty. Cover the skillet or griddle loosely with a lid or aluminum foil to help the cheese melt quickly and evenly.

💡

Covering the pan traps steam, which helps melt the cheese faster.

6

While the cheese is melting, slice the slider buns in half horizontally. Brush the cut sides of the buns with melted butter.

7

Place the buttered slider buns, cut-side down, onto the griddle or skillet next to the patties (or on a separate part of the grill). Toast for about 30-60 seconds, until lightly golden brown and slightly crispy. Watch carefully to prevent burning.

💡

Toasting the buns adds a nice texture and prevents them from becoming soggy.

8

Assemble the sliders: Place the bottom half of a toasted slider bun on a serving platter. Top with a cheeseburger patty. Add 2-3 dill pickle slices on top of the cheese.

9

Add any desired optional toppings like ketchup, mustard, mayonnaise, sliced onions, or lettuce. Place the top half of the toasted slider bun on top.

10

Repeat the assembly process for the remaining sliders. Serve immediately while warm and the cheese is gooey.

💡

Serve sliders with toothpicks to help hold them together, especially if adding extra toppings.
