| 1/2 cup | Cherry or grape tomatoes |
| 2 oz (approx. 1/4 cup) | Fresh mozzarella pearls (bocconcini) |
| 6-8 leaves | Fresh basil leaves |
| 1-2 tbsp | Balsamic glaze |
| To taste | Sea salt |
| To taste | Freshly ground black pepper |
| 1 tsp | Extra virgin olive oil |
Prepare the toast: Lightly toast your bread slices to your desired crispness. You can use a toaster, a toaster oven, or a pan on the stovetop. If desired, lightly brush or drizzle a tiny bit of olive oil on the toast after it's done for added flavor and moisture.
Toasting the bread just enough so it's firm but still slightly soft inside prevents it from becoming too hard or dry.
Mash the avocado: While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Use a fork to gently mash the avocado to your preferred consistency – some prefer it smooth, while others like it a bit chunky. Season with a pinch of sea salt and black pepper.
Prepare Caprese toppings: Halve or quarter the cherry tomatoes and place them in a small bowl. Drain the fresh mozzarella pearls and add them to the tomatoes. Roughly chop or tear the fresh basil leaves.
Assemble the toast: Spread the mashed avocado evenly over each slice of toasted bread. Gently arrange the halved tomatoes and mozzarella pearls on top of the avocado.
Garnish and serve: Sprinkle the fresh basil leaves over the Caprese toppings. Drizzle generously with balsamic glaze. Finish with an additional sprinkle of sea salt and freshly ground black pepper, if desired. Serve immediately and enjoy!
A good quality balsamic glaze makes a big difference in flavor. If you don't have glaze, you can reduce regular balsamic vinegar in a saucepan over low heat until it thickens.
