| 30ml (2 tbsp) | Olive oil |
| 30ml (2 tbsp) | Fresh lemon juice |
| 15g (0.5 oz) | Fresh parsley |
| 5g (0.2 oz) | Fresh mint |
| 2g (0.5 tsp) | Black pepper |
Prepare the halloumi: Remove the halloumi cheese from its packaging. If it's in brine, gently pat it dry with paper towels. Slice the halloumi block into thick, even slices, approximately 1.5cm (0.6 inches) thick. Aim for uniform thickness to ensure even cooking.
Preheat your grill or grill pan: Heat a grill pan or outdoor grill to medium-high heat. You want it hot enough to sear the cheese quickly without it melting too much.
If using a grill pan, ensure it's well-seasoned or lightly oiled to prevent sticking.
Grill the halloumi: Lightly brush or drizzle the halloumi slices with about 15ml (1 tbsp) of olive oil. Place the halloumi slices onto the preheated grill. Grill for approximately 2-3 minutes per side, or until golden brown grill marks appear and the cheese is softened but still holds its shape.
Avoid overcrowding the grill; cook in batches if necessary. Do not move the cheese too much once it's on the grill to allow for nice grill marks.
Prepare the lemon-herb dressing: While the halloumi is grilling, in a small bowl, whisk together the remaining 15ml (1 tbsp) of olive oil, fresh lemon juice, chopped fresh parsley, chopped fresh mint, and freshly ground black pepper. Stir until well combined.
Assemble and serve: Arrange the grilled halloumi slices on a serving plate. Drizzle the lemon-herb dressing generously over the warm cheese. Serve immediately.
