Ingredients

Servings: 4
1kg (2.2 lb) Baby potatoes
500g (1.1 lb) Smoked sausage
1 large (approx. 200g / 7 oz) Red onion
2 medium (approx. 300g / 10.5 oz total) Bell peppers
60ml (1/4 cup) Olive oil
2 tsp Smoked paprika
1 tsp Garlic powder
1 tsp Dried oregano
1 tsp Salt
1/2 tsp Black pepper
2 tbsp Fresh parsley

Steps

1

Preheat your oven to 200°C (400°F). Line a large baking sheet (approximately 45cm x 30cm / 18 x 12 inches) with parchment paper for easier cleanup. Ensure the parchment paper covers the entire surface of the pan.

💡

Using parchment paper prevents sticking and makes cleanup significantly easier. If you don't have parchment paper, you can lightly grease the baking sheet with oil.

2

In a large bowl, combine the halved or quartered baby potatoes, sliced smoked sausage, red onion wedges, and chopped bell peppers. Make sure the bowl is large enough to toss all the ingredients without spilling.

💡

Ensure all vegetables and sausage are cut into roughly uniform sizes to promote even cooking. If your potatoes are very small, you might not need to cut them, but larger ones should be halved or quartered.

3

In a small separate bowl, whisk together the olive oil, smoked paprika, garlic powder, dried oregano, salt, and black pepper. This creates the flavorful seasoning mixture.

💡

Whisking the oil and spices together ensures a more even distribution of seasoning over the ingredients, preventing clumps of spice.

4

Pour the olive oil and spice mixture over the ingredients in the large bowl. Toss everything thoroughly to ensure all the potatoes, sausage, onions, and peppers are evenly coated with the seasoning.

💡

Use your hands or a large spoon to toss. Make sure every piece is lightly coated; this is crucial for developing flavor and achieving roasted textures.

5

Spread the seasoned mixture in a single layer onto the prepared baking sheet. Avoid overcrowding the pan, as this will cause the ingredients to steam rather than roast, resulting in a less desirable texture. If necessary, use two baking sheets.

💡

A single layer is key for achieving crispy potatoes and well-roasted sausage and vegetables. If the ingredients are piled up, they will steam instead of roast, and you won't get the desired caramelization.

6

Roast in the preheated oven for 25-35 minutes, or until the potatoes are tender and golden brown, and the sausage is slightly browned and heated through. The vegetables should be tender-crisp and slightly caramelized.

💡

Check for doneness around the 25-minute mark. Potatoes should be easily pierced with a fork. If they are not tender, continue roasting, checking every 5 minutes. If the vegetables or sausage are browning too quickly, you can loosely tent the pan with foil.

7

Remove the baking sheet from the oven. If desired, sprinkle with fresh chopped parsley for a burst of color and freshness just before serving.

💡

Adding fresh herbs at the end provides a bright contrast to the roasted flavors.

8

Serve hot directly from the sheet pan or transfer to serving plates. This dish is a complete meal on its own.
