| 80ml (1/3 cup) | Red Wine Vinegar |
| 1 tbsp (15ml) | Dijon Mustard |
| 2 tsp (10ml) | Honey |
| 1 tbsp (approx. 5g) | Fresh Parsley, finely chopped |
| 1 tsp (approx. 2g) | Fresh Chives, finely chopped |
| 1/2 tsp (3g) | Salt |
| 1/4 tsp (1g) | Black Pepper, freshly ground |
In a medium-sized bowl, combine the Dijon mustard, honey, salt, and freshly ground black pepper. Whisk these ingredients together until they form a smooth paste.
Gradually add the red wine vinegar to the bowl while continuously whisking. Continue to whisk until the vinegar is fully incorporated into the mustard mixture.
Slowly drizzle in the extra virgin olive oil in a thin, steady stream while whisking vigorously. This emulsification process will create a creamy, well-combined dressing. Continue whisking until all the oil is added and the dressing is slightly thickened.
Whisking slowly and steadily is key to creating a stable emulsion.
Stir in the finely chopped fresh parsley and chives. Mix well to distribute the herbs evenly throughout the dressing.
