Prepare the ginger: Peel the fresh ginger using a spoon or peeler. Thinly slice the ginger into coin-like pieces or grate it using a fine grater. Slicing will yield a milder ginger flavor, while grating will provide a more intense spice.
Combine water and ginger: In a small saucepan, combine the 500ml (2 cups) of water and the prepared ginger. Bring the mixture to a gentle boil over medium-high heat.
Simmer the ginger: Once boiling, reduce the heat to low, cover the saucepan, and let the ginger simmer for 5 to 10 minutes. This process infuses the water with the warm, spicy essence of the ginger. A longer simmer will result in a stronger ginger flavor.
Juice the lemons: While the ginger is simmering, cut the lemons in half. Squeeze the juice from both lemons, ensuring you catch any seeds. You should aim for approximately 120ml (1/2 cup) of fresh lemon juice.
Strain the ginger water: After simmering, carefully strain the ginger-infused water into a heatproof pitcher or directly into your serving mugs, discarding the ginger pieces. This ensures a smooth beverage without fibrous ginger bits.
Add honey and lemon juice: Add the 4 tbsp (60ml) of honey to the warm ginger water. Stir well until the honey is completely dissolved. Then, pour in the freshly squeezed lemon juice. Stir again to combine.
Serve hot: Pour the hot lemonade into heatproof mugs. If desired, garnish each mug with a thin slice of lemon and a fresh mint sprig for an extra touch of freshness and visual appeal.
Serve immediately while hot for the best flavor and warming effect.
